Andrea Anichini was born and raised in the Chianti hills of Tuscany.  He comes from a long tradition of traditional local cooking.  His aunt next door owns a small production Chianti Classico fattoria producing wine and olive oil, his sister-in-law owns a shop in Siena where she makes fresh pasta, and his mother hasa been cooking in the village of Vagliagli since he was a child.

Andrea`s passion is food and wine, but specifically local, Tuscan products and recipes.  He worked for many years at the Dievole Chianti Classico Winery as its chief sommelier.  After that Andrea opened his own Tuscan products store in the center of Siena called Vini Vizi where he sold the highest quality local specialty products like vin santo, pro secco, chocolate, pasta, olive oil, etc.

From there Andrea and his partner opened the very successful trattoria the Vinsantaio in Castelnuovo Berardenga where, again, they specialized in the traditional recipes of the area using seasonal and locally grown, organic ingredients.

Today Andrea is the chef at the Tuscan Renaissance Center where he uses his myriad area contacts to procure the best meats, olive oil, wines and produce.  His passions for food and wine are evident in his meals and his olive oil and wine tastings that he does for each of the programs at San Fedele.

A Traditional Sunday Dinner direct from Tuscany

Andrea – Your Man in Chianti – has been working with Il Chiostro practically since our inception, first at the Dievole Winery where he was the sommelier and general events manager, then as a local Tuscan products purveyor at his boutique in Siena and then as our chef at San Fedele.  Today Andrea teaches special pizza-making classes at our various Tuscan locations and travels to America every winter with his cousin Sandro, chief vintner of the local Oliviera winery, to produce his famous Tuscan meals for small groups at the private homes of clients he met in Tuscany.

For this class, Andrea, with his robust Tuscan personality, will show you how to make the classic pappardelle from scratch (no Cuisinart used here!) topped with the local meat sauce (in Tuscany that would be wild boar, but you can use pork and/or beef).

He’ll prepare a seasonal salad from his garden and a hearty meat dish.

Dessert is always his famous torta cioccolata – with olive oil!

All of this will be accompanied by Oliviera wine from his cousin’s cellars (if you can’t find that in your local wine shop, choose a good Chianti that is at least 80% San Gives grapes to sip as he cooks).

He’ll be presenting all of this directly from his Tuscan kitchen in Vagliagli in the Chianti hills just outside of Siena.

Cooking with Andrea is always an adventure that you won’t want to miss.
