ABOUT THE INSTRUCTOR:

Kim is a graduate of the Institute of Culinary Education, formally known as Peter Kump’s New York Cooking School and has been cooking professionally since 2000. In addition to working in restaurants and catering companies, most notably NYC venues Babbo, Danny Meyer’s Hudson Yards Catering and Jarnac, Kim has taught hands-on cooking classes at Le Gourmet Factory, Williams Sonoma, Rustico Cooking and for Il Chiostro in Sienna, Italy. Most recently she’s added clinical nutritionist to her list of credentials.

Growing up in an Italian family always meant there was a big celebration on Sundays down in the basement of her Aunt Dolly’s home. It was there that her passion for food and cooking took root and eventually led her to fulfill a life-long dream of cooking in Italy not just once but three times, teaching people from around the globe about the beauty and uniqueness of Tuscan cuisine.

Kim’s cooking philosophy is simple and mirrors her Italian roots. She believes uncomplicated food is delicious food, where the flavors of simple ingredients cooked well make your palate sing. Her belief is that delicious food comes from the heart, both nourishing the soul and healing the body.

Her cooking style is based in French technique and incorporates flavors of Italy, France, Greece, Portugal, Hungary and Poland. She will teach you to not only appreciate flavorful food, but her passion for cooking and extensive knowledge will provide you a solid foundation on which to create and celebrate memorable meals with family and friends.

SENZA GLUTINE in Italian means Gluten Free

Do you love, long for and miss the cuisine of Italy because you have a gluten allergy or sensitivity?  GLUTEN-FREE  doesn’t have to mean Italian free.  Chef Kim will teach you an innovative way to make high protein vegetarian pasta sheets to use instead of wheat pasta in a traditional lasagna.  You will enjoy pasta again made even better without the wheat.  No matter if you’re celiac, vegetarian or you just want to learn a new technique, this class is for you.
